Lobster is a limited Fisch mutation that turns fish dark red and multiplies their sale value by 5×. It is separate from the Common Lobster catch.
How to get it
The official mutation article lists a 30% chance from the Lobster Rod.

Rod interaction
The 5× multiplier applies to a mutated fish's sale value. It does not mean the Lobster fish itself is five times as valuable by default; the Lobster Rod is the documented way to produce this mutation.
