Strategy
Holy Water is useful against both large groups of weak enemies and smaller amounts of tougher enemies.
If you have a Horse, it is recommended to gather up all of the Zombies in a Town and kill them by using the Holy Water. Be careful not to also hit the Horse.
Because Holy Water can only spawn in Churches, it is recommended to save it for locations like the Castle, Fort Constitution, or Outlaw's Town.
Holy Water can be sold for a decent amount, so it is worth selling for those who don't care about using it as a Weapon.
Holy Water is essentially a stronger Molotov, so any strategies that are used with the Molotov can be used with Holy Water.

Patch history
Sometimes Holy Water will spawn right outside a Church, although this is rare.
Holy Water used to create multiple smaller puddles instead of one large one. This was changed in an unknown update.
There was also a period of time where Holy Water wouldn't summon Lightning.
